Do you love to entertain like Patti and I do? If so, then you will want a few recipes that will “wow” your guests and have them not only asking for more, but begging for the recipe as well. One of my favorite meals that I love to cook for family and friends is healthy, simple, and tasty. Cilantro-Lime Chicken is top on my list of meals that I love to prepare and eat.
The first thing you will want to do is gather your ingredients to have on hand. I like to choose organic and fresh ingredients made locally, but you can choose your favorite brands to create this dish.
- Organic Chicken Thighs
- Asparagus Spears
- Jasmine Rice Mix
- Chipotle Pepper
- Salt (Sea Salt, Kosher, or Himalayan will do)
- Limes (1-2 medium sized)
- Local Honey
- Fresh Cilantro (one bunch)
- Soy Sauce
- Garlic Cloves (several)
- Crushed Pepper
I usually have several things going on the stove at the same time. I usually get the rice started while I prepare the sauce or marinade for chicken. My trick to adding flavor to the rice is to use chicken broth instead of water and add in both butter and cilantro for taste.
Also while preparing the chicken, I start to saute the asparagus on a pan with oil and allow each piece to brown and get to the point where they are crunchy. Once they have cooked to the point of still being crisp, I like to stack them on the side of the pan to stay warm but not absorb any more of the oil I used.
The sauce for the chicken is next. In a bowl, combine:
- ¼ cup of lime juice
- ¼ cup of local honey as a thickening agent
- ⅓ cup of cilantro (more if you are a cilantro lover)
- 2 tablespoons of soy sauce
- 2 garlic cloves
- A dash of chipotle pepper
- A pinch of crushed pepper
Once I have mixed these ingredients together I begin searing both sides of chicken thighs on a pan until they have browned up nicely. I usually flip them a few times to ensure that they are cooked evenly and all the way through. Once I am satisfied that they are cooked through I cut through one just to be sure.
Then I add the magic! I turn the stovetop heat down and pour the marinade on top of the chicken. Let the marinade thicken for a few minutes. Once you are happy with the simmering sauce’s thickness, you can begin preparing the plates for the meal.
Create a bed of rice and place the chicken on top and the asparagus alongside the meal. Next, add extra sauce on top of the rice and allow it to be absorbed. Voila! Now you are ready to enjoy your dish and great company. Bon Appetit!
